A stamp of quality for 'Nice cookery'
Salade niçoise, stuffed vegetable, pissaladières (onion pizzas), pan bagnat (salade niçoise sandwich)… 15 kinds of Nice cookery specialties enjoy a stamp of quality from now on. The Alpes-Maritimes UDOTSI (regional union of tourism offices) has registered at the INPI (National Institute for Intellectual Preservation) a stamp of quality 'Cuisine Nissarde, le respect de la tradition' (Nice cookery, respect of tradition).About forty restaurants, from gourmets to simple ones have already received the stamp of quality. They committed themselves to writing on their menu at least 3 specialties among the 15 existing, following the traditional recipes of the old Nice County. These recipes, that belong to the culinary heritage of the region, had been previously selected by a committee composed by Nice cookery specialists.
